Whole Wheat Pasta Frittata

If you have never cooked with whole grain pasta, this recipe might be an enjoyable way to get started! This is also a great dish for breakfast with last night's left over pasta.

Whole Wheat Pasta Frittata

Ingredients

For 4 people ()

  • 4 ounce(s) whole grain spaghetti, regular or thin
  • 1 dash(es) Dash nutmeg (optional)
  • 4 part(s) eggs, lightly beaten
  • 1 teaspoon black pepper
  • 1 cup(s) Parmesan cheese, shredded
  • 1 cup(s) frozen peas, thawed
  • 1 cup(s) broccoli

Directions

  1. Preheat oven to 350°F.
  2. Cook pasta according to package directions. Drain and place in a 9-inch pie plate that has been sprayed with nonstick cooking spray.
  3. Combine eggs, seasonings, cheese and peas. Spread the egg mixture over the top of the spaghetti so the mixture covers the frittata and some of it sinks between the spaghetti strands.
  4. Bake at 350°F for 20 minutes or until a knife inserted near the center comes out clean. Let frittata stand 5 minutes before serving.
  5. Cook’s Note:  Use a food thermometer to avoid overcooking eggs AND assure safety.  The center of the mixture should read 160°F on the food thermometer in order to determine doneness in egg dishes (such as quiche, casseroles, stratas, frittatas, etc.), To ensure an accurate reading, you may need to insert the thermometer at an angle so enough of the thermometer reaches into the food.
