Braised Leeks

Leeks, like garlic and onions, belong to a vegetable family called the Allium vegetables. Like their allium cousins, onions and garlic, let leeks sit for at least 5 minutes after cutting and before cooking to enhance their health-promoting qualities.

Braised Leeks

Ingredients

For 4 people ()

  • 5 Leeks trimmed washed and quartered
  • 1 cup(s) Chicken broth
  • 1 tablespoon(s) Balsamic vinegar
  • 1 pinch(es) Salt and pepper

Directions

  1. In a medium skillet with a lid, heat the oil over medium heat.
  2. Add the leeks and the chicken broth; then cover and braise, stirring occasionally, for 12 minutes or until leeks are tender.
  3. Remove the lid, and cook for about 10 minutes, or until the broth has almost evaporated.
  4. Increase heat to high and sprinkle the vinegar over the leeks.
  5. Cook, stirring frequently, for another 10 minutes or until the leeks are lightly caramelized. Season with salt and pepper .
  6. Serve immediately.
