Garlic Chicken Kale & Cheddar Grilled Cheese

Grilled Cheese that is SURE to please!


Shred your chicken or other leftover meat in a large bowl with two forks, set aside.

Finely chop the kale into teeny tiny little confetti sized pieces, add to chicken.

Finely grate the fresh garlic into the chicken and kale, toss in the grated cheddar and craisins if you wish and fold to evenly combine.

Season generously with salt and pepper.

Heat a large skillet to medium low heat. Put and handful of chicken, kale, garlic cheese mixture on a slice of bread. ( I do them all at once in a line up so the mixture is evenly distributed)

Spread Dijon on inside of other halves of sandwich if choosing to do so. Put the top slice on the sandwiches and press down to compress to the filling is pressed together nice and tight.

Butter both sides of sandwich and toast in hot pan until golden brown on both sides, (I toast them one by one)

Serve immediately so they are nice and hot, pairs well with a light salad or a small bowl of soup. Enjoy.

This week is kale week, and to celebrate I have put together a recipe that the whole family will love. Bring your little ones in the kitchen to help out, this might just be their new favourite lunch option.


2 cups of leftover cooked chicken or other leftover meat you need to use up, (I usually use leftover roasted chicken.)

4 large kale leaves

2 cloves of garlic

2 cups of grated white cheddar cheese

salt & pepper

handful of craisins (optional)

butter, enough to spread on 8 slices of bread

8 slices of bread of choice, (I use multi-grain and seed mini pita rounds and just cut them in half.)

tablespoon Dijon mustard ( probably only for the mama's and the poppa’s, but who knows)
